Supreme Pizza Casserole - Grandma Gave It Two Thumbs Up!

We just got back from seeing grandma and we took her some of the left over pizza casserole. She's not a big pizza fan so I wasn't sure if she would like it or not. She loves it! Whoo Hoo - Hope you like it too.

Pizza Casserole Recipe

Originated in Stoneboro, Pennsylvaniz by Nancy Foust but I made a few changes.

Ingredients -
8 ounces uncooked fettuccine
2 pounds ground beef
1 medium onion, chopped (I didn't use a whole of onion)
2 cans (8 ounces each) mushroom stems and pieces, drained (I skipped this because I don't like them)
15 ounces tomato sauce
14 ounces pizza sauce
6 ounces tomato paste
1/2 teaspoon sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon oregano
4 cups of mozzarella cheese, divided
1 package sliced pepperoni
1/2 cup grated Parmesan cheese

- Cook fettuccine according to package directions. Meanwhile, in a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. ****I chose to just brown the meat in a regular frying pan and add the onions.****
Stir in the mushrooms, tomato sauce, pizza sauce, tomato paste, sugar and seasonings. Drain fettuccine; stir into meat sauce.

- Divide half of the mixture between two greased 2-qt. baking dishes; ****I chose to spray my 13*9 baking pan with Pam and use that instead of the 2-qt.****
Layer - meat/fettuccine mix, mozzarella cheese, meat/fettuccine mix, mozzarella cheese, top the last layer with pepperoni and Parmesan cheese.

- Cover and bake at 350 degrees (I covered my baking pan with aluminum foil) for 20 minutes. Uncover; bake 10-15 minutes longer or until heated through. If you use the 2-qt. that will yield 8 servings each.

Tip The Scale Tuesday - Week 11



After busting my ars for the last week working out and breaking a sweat daily I've gained three pounds. Yep a whole whopping three pounds! Discouraged? Yes, very much so. What's different? I think it is possible I didn't eat enough. I might have skipped breakfast here or there and once again I went without water. I'm terrible about drinking water and I know this about myself. I'm pretty frustrated that is for sure. I've got my classes at the YMCA, my FitLinxx, my Wii Fit and my EA Active Sports package. I've got lots of resources and I use one of them daily. I don't know, until next week.

Tuesday Toot #49

Here it is a pizza casserole! It is really good. My son bought a cooking magazine on Sunday and this is one of the recipes we thought we would try. If you would like the recipe just let me know and I will get it to you or post it.

Tornado Toddler Strikes Again!

Here he is up to his regular shenanigans. I had just mixed up a package of Hidden Valley Ranch and sour cream. I had obviously not put the lid on the bowl yet and I clearly had my back turned. Bad idea on my part. He took his little hand and just started eating it. He loves the stuff! Can you tell? He likes to dip croutons in it. I think Hidden Valley Ranch has another customer.

Professional Soccer Player Signs Flip Flop

My son attended a soccer camp at a University last week. While he was there Houston Dynamo player Craig Waibel was there to give tips and autographs. My son had him sign his flip flop! I asked my son, "Why the flip flop? Why not your shirt?" He replied with, "Mom! I was wearing my Scout shirt!" rofl...good point! He said he didn't have him sign his shorts either because they were black. There you have it and I had to take a picture because after he wears that flip flop a few more times that signature is going to be gone.

EA Sports 30 Day Challege - I'm In

The EA Sports Active package is out of the box and I started my 30 day challenge this evening. I'm only going to be able to use it at night after the little people are off to bed. That's just the way it is for now. I work out during the day at the YMCA so it's really an extra work out for me but I won it from Julie at Momspective so I want to use it as much as possible. The concept is really cool.

My first day was really fun but I had lots of problems. The leg band you see in the photograph has lots of issues for me. I don't know what the problem is but mine was not reading correctly. I would run and walk and it wouldn't read what I was doing. It would tell me I was going to slow. The squats were a nightmare too. It wouldn't read unless I was almost sitting down on the floor. I'm not sure if I had the remote in the pocket wrong or what. Also when I tried the inline skating it doesn't move fast but my jumps rock! I've got plans to check it out tomorrow. The resistance band is way too long for me. I'm going to have to tie the ends again because I'm not that tall and they don't work right for me. I love the punching part, no problem there at all.

After my total body workout class today I thought I wouldn't be able to do it so I set my workout on a low level. I didn't want to get hurt I just wanted to play. I'm looking forward to more play time tomorrow night.

Gran Torino - Movie Review

Mmmmm love me some Clint Eastwood! He's a such a legendary cool guy. After seeing the trailer for Gran Torino I knew this was going to be a film to see. I loved it! His character reminded me a lot of my grandpa (may he rest in peace). He was a cantankerous, very direct kind of character.
The beginning of the film nearly made me cry. His sons and their families were so disrespectful to him. Those scenes made me crazy. I looked over at my husband with my jaw dropped and then I told him, "Oh my God! our kids could be saying that about us some day!"
This is a must see film so go ahead and put it in your queue to be rented. If your a Clint Eastwood fan you are going to love it. Oh be sure to turn it up though it's a little hard to hear Clint talk.

Flash Back Friday #49 - Hanker For A Hunk O' Cheese


My grandmother has been very ill lately. When I spoke to her a few days ago she was telling me that she didn't have a lot of energy. Then this super silly song popped in my head and I had to ask, "Have you tried some cheese?" Then I tried to sing the song to her but I couldn't remember all the words. That's when the hunt began and here you have it! Do you remember this one?

They say it comes in threes, what comes? Death. It's hard to believe that we have lost three different icons so quickly. It's even more scary when you have grown up with these stars. These deaths make you reflect on your own existence. How can they not?

What teenage guy didn't have this poster hanging in his room? I know my big brother did so I remember Farrah pretty well. I remember watching Charlie's Angels too. Female heroins were pretty new along with Linda Carter as Wonder Woman and Lindsey Wagner as The Bionic Woman.

Michael Jackson 8/29/58 - 6/25/09
And then there is "The King of Pop" Michael Jackson. This video is how I remember Michael Jackson. I remember when my mother and I first saw him do the moon walk, we were floored! It was so cool. Oh sure he was legendary with Jackson 5 but he really changed the world when he went solo. He put his stamp on the world and his death reminds me of when Elvis died. I remember very clearly as a little girl the world mourning Elvis. Children now will remember the world mourning Michael Jackson.

It's a strange feeling when many of your childhood pop icons begin dying. It makes you think about your own mortality. Are you doing everything you want to do? Are you getting rid of all those poisonous relationships? Are you at peace with yourself? Have you said everything you want to say to the people that you love? Life is truly short and unpredictable.

Tip The Scale Tuesday - Week 10



Finally some movement in the right direction. I've had a two pound loss for this week. Thank goodness because I have been breaking a sweat every single day this past week. I might have over done it though. My calves feel like they are going to explode. Oh and a little trick that I've been doing too is eating on smaller plates. I also use big glasses for the good stuff and small cups for the stuff I shouldn't have at all. I have yet to give up Big Red. It's really my one super vice!
