#30DayPaleoChallenge - Days 5 & 6

Really? It's only day six! Insert deep breath and move right along. OK - lot's of recipes to share. The first one was sort of a late night must bake something sort of moment. Also, the boy who is allergic to nuts was already in bed so he wouldn't be odd man out. We tried Apple and Banana Muffins (click hyperlink for the recipe).



My son is just goofing off here!
Our home smelled so good! The wonderful aroma of apples. We couldn't wait to take a bite! Oh and when we did....GAK!!! These things were awful. Did I do something wrong? Did I mess something up in the recipe? People are raving about these things. To me, I just wasted a perfectly good apple and banana. I might have gotten more flavor from eating a piece of cardboard. Maybe I just have picky taste buds. On that note I gave one to my husband without saying a word. Remember, they do smell delicious! He took a bite and looked at me like I was trying to poison him! He wrapped a piece of bacon around it in order to get it down. But hey, we certainly did give it a try.
This next recipe was shared on our Facebook group (Daniel LeSage). 
4 bananas (mashed)
1 cup of coconut flakes
Cinnamon to taste

Mix it all together and place in in the fridge or even the freezer until to desired temp

I cut this recipe down for one banana. After those muffins I have learned to test the waters a little bit more carefully without using so much ingredients. The flavors are not bad but the consistency is a bit like baby food. I had to slice up more bananas to put into it and tried to freeze it a bit just because I like it really cold. Next up Cinnamon apples!
Pretty easy recipe again from our Facebook group (Liane Colley):

Core and roughly chop apples, sauté in coconut oil for a few minutes then add some cinnamon. Pour the pan juices over the apples. Yum!

She's right! They are pretty darn good. So for those of you trying to figure out what to do with that left over coconut oil you can try it.

My son said he really misses Ranch Dressing and I found this recipe online. I don't think it's supposed to have the consistency of soup! :(

Back to the drawing board we go! Only 24 more days to go. You know what I miss? I miss cheese! I miss Mexican food. I miss pasta like crazy. I can't go down the list of things I miss or I will be sad. I just have to focus on how good this is for my body. Right? So far I've only gained 3 points for that silly piece of peppermint candy! I think I can keep going. I'm certainly spending a boat load more time in the kitchen. I think I need more supplies though, like a food processor? We're checking into the Magic Bullet. Now it's time for a nap!
